The appearance color of bell peppers is significantly related to their quality which affects consumer’s acceptance to buy. Also, homogeneity of color are among the most essential export standards of bell peppers. Commercially standard colorimetric devices are very expensive and are often available in scientific research centers. Fruits and vegetables are important components of healthy diets. Vegetable freshness is important for both postharvest industry and consumer appeal. This study focused on freshness detection of parsleys using combined image processing and artificial intelligence techniques. A dataset of color and texture features computed from parsley images.
